Chicken Fried Steak – Air Fryer

Equipment

Ingredients

For the Steaks

  • 2 each cubed steaks about 6 ounces each
  • 3/4 cup flour all-purpose
  • 1 tsp ground black pepper
  • 1 tsp Kosher salt
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 2 tsp crumbled dried sage
  • 3/4 cup buttermilk
  • 1 tsp hot pepper sauce
  • 1 each egg
  • non-stick cooking spray

Gravy

  • 4 tbsp butter
  • 2 tbs flour all-purpose
  • 1 tsp cracked black pepper
  • 1/2 tsp Kosher salt
  • 1/4 tsp garlic salt
  • 1/2 cup whole milk
  • 1/2 cup heavy cream

Instructions

Prepare Steaks

  • Whisk the flour, pepper, salt, paprika, onion powder garlic powder cayenne and sage together in a shallow bowl. Set aside for flour dredge.
  • In a different shallow bowl, whisk together the buttermilk, hot pepper sauce and egg. Set aside.
  • Pat the steaks dry. Season with salt and pepper to taste. Let stand for 5 minutes and pat dry again.
  • Dredge the steaks in the seasoned flour mixture. Shake off any excess flour. Dredge in buttermilk mixture and allow excess to drip off. Dredge in the flour mixture again and shake off excess.
  • Place the breaded steaks on a sheet pan and press remaining flour mixture onto the steaks. Make sure each steak is completely covered. Let stand for 10 minutes.
  • Place steaks in the air fryer basket. Lightly coat with vegetable oil spray. Set the air fryer to 400°F for 8 minutes. Turn steaks half way through cook time and spray the other side lightly with vegetable oil spray.

Prepare gravy

  • Melt butter in a small sauce pan over low heat. Whisk in the flour, pepper, salt and garlic salt. Whisking constantly.
  • Slowly add the milk and cream mixture again whisking constantly.
  • Turn the heat to medium and cook until thickened, whisking occasionally.

Hints

  • Use a meat thermometer to ensure steaks have reached an internal temperature of 145°F. Serve the steaks topped with the gravy.
  • Let the steaks sit for 5 minutes after seasoning and patting dry, before dredging.
  • For even crispness, be sure the flip the steaks at the 4 minute mark and lightly spray with vegetable oil.
